Grilled Pineapple and Lime-Marinated Pollock with Rice and Pineapple Salsa

Ingredients
- 200 g pollock fillet
- ½ pack taco spice mix
- ½ x lime
- 1 dl rice
Method
- In this dinner we'll use the pineapple salsa and pineapple peel/shell that we saved from earlier in the weekly menu.
- Mix together taco seasoning and lime juice and pour over pollock. Marinate for at least 20 minutes.
- Boil rice according to the instructions on the package.
- Slice the pineapple peel in half, and place the fish fillet in between. Grill the fish inside the pineapple for about 15 minutes. Flip halfway through.
- Serve the pollock over rice. Top with leftover pineapple salsa.
