Either if you are a vegetarian, or just a fan of having some meatless days during the week (isn´t that starting to become a sort of standard now?), you have to try this pulled mushroom taco! Mushrooms takes on a lot of flavor from spices and gets a juicy pulled consistency.
Ingredients
- 300 g oyster mushrooms
- 1 tbsp butter
- 1 pack taco spice mix
- ½ dl beer
- 1 pack tortillas
- 2 handful lettuce
- 1 pack creme fraiche
- 1 x avocado
- 2 handful pickled red onions
- 1 handful coriander
- 1 x lime
Method
- Brush off dirt from the mushrooms.
- Add butter to a pan, and tear the mushroom in smaller bits, one by one into the pan. Pour over your taco spice mix of choice, and cook on medium high heat.
- When the mushroom has become soft, pour over the beer (or water/stock/other preferred liquid) to spread the spice evenly and add more flavor. Continue to cook the mushroom until desired consistency. The longer you cook, the more caramelized it will get.
- Serve the pulled mushroom tacos however you like your tacos! I like to serve them with tortillas, creme fraiche, lettuce, avocado and pickled red onions, with coriander and a sqeeze of lime on top.
