 Sticky Lime Tofu with Rice

A tangy and spicy tofu dish – here you go! Super quick to make and very flavorful. Use gluten free soy sauce to make the dish gluten free.

Ingredients

  • 1 ½ dl rice
  • 3 dl water
  • 125 g tofu (firm)
  • 4 tbsp soy sauce
  • 2 tbsp sesame oil
  • 2 clove garlic
  • 1 tbsp rice vinegar
  • ½ x lime
  • 1 dl water
  • 1 tsp honey
  • ½ x carrot
  • 1 x spring onion

Method

  1. Rinse the rice under cold water until the water runs clear. Put water and rice in a saucepan and bring to a boil under a lid. Reduce the heat so the rice simmers gently in the pan. It will be ready in about 12-13 minutes.
  2. Press tofu to remove excess water and cut into cubes.
  3. In a bowl, combine soy sauce, sesame oil, finely minced garlic, rice vinegar, water, lime juice, and honey. Add lime zest. Mix well. Transfer half to another bowl, and add tofu cubes to one bowl. Allow them to marinate for about 15 minutes.
  4. Heat a frying pan with oil over medium heat and add the tofu cubes to the pan. Cook until they are golden on all sides.
  5. In a small saucepan, pour in the remaining marinade. Simmer until slightly thickened. Pour over tofu and serve immediately with chopped spring onion, fresh carrot, and rice. Optionally, sprinkle with sesame seeds.
