Grilled Pineapple and Lime-Marinated Pollock with Rice and Pineapple Salsa

  • 200 g pollock fillet
  • ½ pack taco spice mix
  • ½ x lime
  • 1 dl rice

  1. In this dinner we'll use the pineapple salsa and pineapple peel/shell that we saved from earlier in the weekly menu.
  2. Mix together taco seasoning and lime juice and pour over pollock. Marinate for at least 20 minutes.
  3. Boil rice according to the instructions on the package.
  4. Slice the pineapple peel in half, and place the fish fillet in between. Grill the fish inside the pineapple for about 15 minutes. Flip halfway through.
  5. Serve the pollock over rice. Top with leftover pineapple salsa.
