Ingredients
- 1 x avocado
- 1 clove garlic
- ½ tsp salt
- ¼ tsp black pepper
- ½ x lime
- 150 g cod fillet
- ½ pack taco spice mix
- ½ dl water
- 2 x nectarines
- ½ x tomato
- ½ x red onion
- ½ pack tortillas
- ½ pack rocket
Method
- Start by making the guacamole. Mash the avocado in a bowl. Add minced garlic, and season with salt, pepper and lime juice. Set aside.
- Cut the cod fillet into cubes and add to a frying pan, together with taco seasoning and a small splash of water. Cook until the fish begins to flake.
- Dice nectarine, red onion and tomato, and mix together in a small bowl. Feel free to add some finely chopped chili.
- Heat the tortillas according to the instructions on the package.
- Fill tortillas with rocket, nectarine salsa, cod and guacamole. Top with a few slices of lime.
