Ingredients
- 3 tbsp neutral oil
- 1 x yellow onion
- 1 pinch turmeric
- 2 x eggs
- 300 g water
- 1 pinch salt
- 1 pinch black pepper
- 2 x spring onion
- 1 pinch chili flakes
Method
- Heat the oil to a pan. Chop onions. Fry the onion a little and add turmeric and caramelize the onion. Add the eggs and fry them for 2-3 minutes on medium heat. Add water, season with salt and pepper. Stir and cook for 10 minutes on low/medium heat.
- Just before serving sprinkle over minced spring onions and chilli flakes. If you like, serve this delicious soup with bread. I usually top mine with flat bread.
