Frittata di Pasta

Frittata di Pasta, or easier said: omelette with leftover pasta, is an Italian classic that makes it super easy to transform dull leftover pasta to something tasty. Experiment with different kinds of leftovers, but the classic is made with spaghetti in tomato sauce. You can also add cured meats, cheeses, herbs or vegetables.

Ingredients

  • ½ x yellow onion
  • 1 tbsp olive oil
  • 1 handful fresh basil
  • 15 g parmesan
  • 2 x eggs
  • 1 tbsp crème fraîche
  • 1 pinch salt
  • 1 pinch black pepper
  • 200 g leftover pasta
  • 1 pinch chili flakes

Method

  1. Finely slice the onion and sauté in olive oil until it`s softened. Remove from the pan and set to side.
  2. Roughly chop the basil. You can use other herbs instead of basil. Parsley or chives are wonderful. Grate the parmesan.
  3. Whisk together eggs, crème fraîche, the sauteed onion and a pinch of salt and pepper.
  4. Heat up olive oil in a frying pan (non stick works best). Add the pasta and cook on medium/high heat until the pasta starts to crisp up a little.
  5. Decrease the temperature of the frying pan. Sprinkle the herbs and cheese over the pasta before the egg mixture is poured in evenly. Cook on low heat until the omelette is cooked almost all the way through so that you can use a plate to flip it over and cook it a little bit on the other side. If you have a frying pan that can be placed in the oven the omelette can also be finished with this method.
  6. Slide the omelette onto a chopping board and divide into pieces. Serve with a salad dressed with a nice tangy vinaigrette and fresh herbs. Top with chili flakes and more parmesan.
