Ingredients
- 3 x potatoes
- 1 dl plain white flour
- 1 pinch salt
- 1 clove garlic
- 2 tbsp fresh coriander
- 1 dl crème fraîche
- ¼ x lime
- 2 x pork ribs
- ½ x carrot
- ¼ x cucumber
- 1 x spring onion
Method
- Dice the potatoes and boil in water until soft.
- Pour out the water from the potatoes, and mash them with a fork or potato masher. Add salt and the flour, little by little. Keep adding flour until a nice, smooth dough comes together.
- Divide the dough into equal parts, and roll out each part into thin flatbreads. Use plenty of flour while rolling them out.
- Cook the loaves on high heat in a dry pan until they have golden spots on both sides. Store the flatbreads covered with a damp kitchen towel.
- Make the coriander dressing. Mince the garlic and chop coriander. Add to a bowl with creme fraiche. Stir, and season with salt, pepper and lime.
- Grill or fry the ribs on a grill or in a frying pan until the meat is cooked all the way through.
- Thinly slice carrots and cucumber with a cheese cutter and chop spring onions.
- Top the potato flatbreads with coriander dressing, grilled ribs and chopped vegetables.
