Ingredients
- 200 g vegan mince
- ½ pack taco spice mix
- 1 x avocado
- 1 clove garlic
- ½ tsp salt
- ¼ tsp black pepper
- ½ x lime
- 2 x tortillas
- ½ x cucumber
- ½ x red pepper
- ½ x red onion
- 1 dl sour cream
- 50 g cheese
- ¼ pack spinach
Method
- Cook the vegan mince in a frying pan with some oil or butter.
- Add taco seasoning and a splash of water to the mince, and mix well.
- Make guacamole by mashing an avocado, and add minced garlic. Blend together and season with salt, pepper and lime juice.
- Grate cheese, and dice cucumber, paprika and red onion.
- Fill tortillas with spinach, vegetables, sour cream, grated cheese and a dollop of guacamole.
- If you follow the weekly menu, you have to set aside half of the cooked vegan taco mince and guacamole. These will be used in another dinner.
