
Ingredients
- ½ x cucumber
- ½ x red pepper
- ½ x mango
- ½ x red onion
- 1 x avocado
- 1 clove garlic
- ½ pack kidney beans
- ½ pack taco spice mix
- 4 x tortillas
- ¼ pack spinach
- ½ pack corn
- ½ pack tortilla chips
- ½ pack sour cream
Method
- Dice cucumber, red pepper, mango and red onion.
- Make the guacamole by mashing an avocado and mix it together with minced garlic. Season with salt and pepper to taste.
- Heat the kidney beans with taco spices and a small splash of water in a frying pan until the water is absorbed.
- Heat the tortillas according to the instructions on the package.
- Fill the tortillas with spinach, diced veggies, corn and beans. Top with sour cream, guacamole and crushed tortilla chips.
