Ingredients
- 200 g vegan mince
- ½ pack taco spice mix
- 1 clove garlic
- 1 x avocado
- ¼ x lime
- ½ x mango
- ½ x romaine lettuce
- ½ x red onion
- ½ x tomato
- 75 g corn
- 4 x taco shells
- 3 tbsp fresh coriander
Method
- Cook the veggie mince along with taco seasoning in a frying pan until well cooked. If you're in doubt, it's better to cook it a little too long, as this gives it a meatier consistency.
- Make the guacamole by mincing garlic and add it to a bowl with avocado and lime juice. Mash until nice and chunky, and season with salt and pepper.
- Prepare the veggies. Slice the mango into small pieces, wash and tear romaine lettuce into pieces, dice the red onion and tomato and rinse the corn.
- Heat the taco shells according to the instructions on the package.
- Serve the veggie taco mince in shells along with vegetables, guacamole and fresh coriander.
