Ingredients
- ¼ pack taco spice mix
- 50 g lettuce
- 35 g corn
- 1 pinch chipotle spice
- ¼ tsp salt
- ¼ tsp black pepper
- 1 dl walnuts
- 1 dl mushroom
- 1 pinch red pepper spice
- 1 pinch cumin
- 1 tbsp lemon juice
- ½ x tomato
- ¼ x cucumber
- 20 g tortilla chips
- ½ dl black beans
- ½ dl fresh coriander
- ¼ dl plant-based yoghurt
- ½ tbsp plant-based mayonnaise
- ¼ tsp agave sirup
- ¼ tsp mustard
Method
- Chop all the salad ingredients and assemble in a big bowl.
- Make the dressing by mixing together all the ingredients.
- Add the taco mixture to the salad and top with dressing. Enjoy!
- Make your vegan taco meat by frying chopped walnuts and mushrooms in a few tbsp water for 5 minutes. Add the taco spice mix and a few tbsp water. Cook until the liquid has absorbed.
