Taco Salad

Ingredients

  • ¼ pack taco spice mix
  • 50 g lettuce
  • 35 g corn
  • ¼ tsp black pepper
  • ¼ tsp salt
  • 1 pinch chipotle spice
  • 1 pinch cumin
  • 1 pinch red pepper spice
  • 1 tbsp lemon juice
  • ¼ tsp mustard
  • ¼ tsp agave sirup
  • ½ tbsp plant-based mayonnaise
  • ¼ dl plant-based yoghurt
  • ½ dl fresh coriander
  • ½ dl black beans
  • 20 g tortilla chips
  • ¼ x cucumber
  • ½ x tomato
  • 1 dl mushroom
  • 1 dl walnuts

Method

  1. Add the taco mixture to the salad and top with dressing. Enjoy!
  2. Make the dressing by mixing together all the ingredients.
  3. Make your vegan taco meat by frying chopped walnuts and mushrooms in a few tbsp water for 5 minutes. Add the taco spice mix and a few tbsp water. Cook until the liquid has absorbed.
  4. Chop all the salad ingredients and assemble in a big bowl.
