Spicy Salmon Fillet with Mango Salad

Ingredients

  • 200 g salmon fillet
  • ½ pack taco spice mix
  • 1 tbsp olive oil
  • ½ pack spinach
  • ½ pack feta cheese
  • ½ x mango
  • ½ x cucumber
  • ¼ x red onion

Method

  1. Rub the fillets with taco seasoning and olive oil. il. The salmon becomes more flavourful the longer it marinates, but it's perfectly fine to cook it right away.
  2. Bake the salmon in the middle of the oven at 200 degrees celsius for about 10-15 minutes.
  3. Dice the mango, cucumber and red onion.
  4. Mix the diced vegetables with the spinach in a bowl. Top with feta cheese and serve with the salmon.
