Ingredients
- 160 g bulgur
- ½ x cucumber
- 65 g rocket
- 30 g fresh mint
- 1 x red onion
- 400 g chickpeas
- 1 x pomegranate
- 100 g feta cheese
- 65 g pistachios
- ½ dl olive oil
- 1 x lemon
- ½ tsp salt
- ½ tsp black pepper
Method
- Prepare bulgur according to the directions on the package.
- Dice the cucumber, chop mint and pistachios, finely chop red onion and peel the pomegranate.
- Combine bulgur, cucumber, arugula, mint, red onion, chickpeas, pomegranate, feta cheese and pistachios to a big salad bowl.
- Prepare the lemon vinaigrette. Combine olive oil, lemon juice, salt and pepper. Add more salt and pepper to taste.
- Pour the vinaigrette over the bulgur salad and toss together. Enjoy!
