Greek-style pite filled with tzatziki-like youghurt mix and crispy chickpeas! Healthy, tasty and cheap!
Ingredients
- 4 x pita bread
- 1 x red onion
- 2 can chickpeas
- 2 tbsp extra virgin olive oil
- 1 tsp salt
- 1 tsp black pepper
- 2 tsp red pepper powder
- 350 g greek yogurt
- 1 x cucumber
- 1 x lemon
- 1 handful fresh dill
Method
- Chop cucumbers in bite size pieces. Add to a bowl and mix in youghurt and juice from half a lemon. Add chopped dill and season with salt and pepper.
- Put the chickpeas on a baking sheet. Drizzle over olive oil and the dry spices. Put in the oven on 200°C for 30 minutes.
- Put the pitas in the oven underneath the chickpeas for 5 mins. Cut in halt and fill with youghurt mix, chopped red onion and chickpeas.
