Ingredients
- 100 g pork tenderloin
- 2 tbsp barbecue sauce
- 120 g coleslaw salad mix
- ½ x red onion
- ½ dl sour cream
- ¼ tsp salt
- ¼ tsp black pepper
- ¼ x lemon
- 50 g spinach
- ⅓ x cucumber
- 1 x spring onion
Method
- Chop the pork tenderloin into small pieces and place in a bowl with the bbq sauce. Mix and leave the meat to marinate for at least 30 minutes.
- Make coleslaw by mixing the coleslaw veggie mix, sliced red onion, sour cream, salt, pepper and lemon juice in a bowl.
- Thinly slice the cucumber and spring onions.
- Place the tenderloin pieces on the grill skewers and grill the skewers on all sides until the meat is cooked through. Serve with coleslaw, spinach, cucumber and spring onions.
- Set aside half of the coleslaw. It'll be used in another dinner later this week.
