Ingredients
- 1 clove garlic
- 100 g chickpeas
- ½ x lemon
- ¼ tsp salt
- ¼ tsp cumin
- 3 tbsp olive oil
- 2 x pita bread
- 2 x vegan sausages
- ½ x red onion
- ¼ pack rocket
- 50 g feta cheese
Method
- Chop the garlic and add to a bowl with the chickpeas, lemon juice, salt, cumin and olive oil. Use an immersion blender (or a small food processor) and blend until the hummus is smooth.
- Heat the pita breads and fry the vegan sausages according to the instructions on the package.
- Top the pitas with hummus, vegan sausages, diced red onion, rocket and feta cheese.
- If you follow the weekly menu, set aside half of the hummus. It'll be used in another dinner.
