Nachos with Cheese and Salsa

A perfect leftover dinner. If you have any leftover vegetables, fish or meat in the fridge, feel free to fry them with some taco seasoning and add them here for extra flavour! If you follow the weekly menu of which this dish is a part, you must use the salsa you made in the dish "Vegetarian burger with homemade salsa".

Ingredients

  • 3 handful tortilla chips
  • 2 handful grated cheese
  • 1 tbsp sour cream
  • 1 handful fresh baby spinach

Method

  1. Check your fridge to see if there are any leftovers you can use. Finely chopped vegetables, meat or fish can be fried and mixed with a little taco seasoning or other seasoning. I've got a bit of a craze for spices with seaweed, which gives a really good taste.
  2. Layer tortilla chips, grated cheese and leftovers in an ovenproof dish. Bake at 200 degrees celsius for 20 minutes and enjoy with salsa, sour cream and shredded fresh baby spinach.
