Sweet Potato Taco – The perfect opportunity to use some leftovers from your fridge! Chopped tomato, lettuce, corn, grated cheese, paprika - yes, anything you like. Tortillas are usually a little cheaper than taco shells at the store, so I've learned how to make my own tortilla lefse shells! And now …
Make taco shells from lefser in this way. Grease the lefs with olive oil and salt them on one side. Heat the oven to 200 degrees. Hang the lefs on a wire rack so that it forms a shell that hangs upside down. Bake for about 7 minutes or until you see that it is golden around the edges. They harden when they cool down, so place them in such a way that there is room for the filling.
