Making a burger with homemade burger bread and salsa is so satisfying. It's a bit of work, but it's definitely worth it. If you follow the weekly menu this dish is part of, you should set aside half of the homemade salsa for the next dish.
Ingredients
- 1 x potatoes
- 1 ½ dl water
- 2 ½ dl plain white flour
- ½ pack dry yeast
- 1 pinch salt
- 1 tbsp butter
- 1 x eggs
- ½ x red pepper
- 1 clove garlic
- ½ x red onion
- ½ can chickpeas
- 2 tbsp oats
- ½ tsp bbq seasoning with seaweed from lofoten
- 2 handful plum tomato
- 1 handful fresh coriander
- ½ tsp sriracha
- 1 tbsp sour cream
- 1 handful fresh baby spinach
- 1 handful tortilla chips
Method
- Wash, peel and slice the potato. Boil the potato in salted water until it is cooked through.
- Place the hot potato in a bowl and pour water over it. Mash it together with an immersion blender or a fork until it is a fine mass.
- Mix flour, dry yeast and salt in a bowl. Combine with butter.
- Place the red pepper, skin side up, to an ovenproof dish. Pour over a little olive oil and salt and bake in the oven at 200 degrees for 20 minutes. Mince the garlic and half the red onion and fry until soft to a pan with olive oil. Remove the skin from the red pepper and put the meat in a food processor together with the onion and garlic.
- Add spices. I've really started to like seasoning with seaweed. It gives a delicious umami taste.
- Mix together to a coarse mass. Shape into burgers and place them on a baking tray lined with baking paper. Bake them for 20–30 minutes at 200 degrees celsius until they are cooked through.
- Make homemade salsa to the food processor. Add the plum tomatoes, the rest of the red onion, coriander, sriracha and salt and pepper. Blend together.
- Layer the burger in the burger bun with sour cream, chopped baby spinach, burger, salsa and chips. Enjoy with tortilla chips and salsa on the side.
- If you have burger bread left over, you can eat these for breakfast or lunch the next day. Store them in an airtight box or bag. Or you can freeze them and use them for the next burger you're going to make.
- Mix in the potato liquid and egg. Knead the dough for 10 minutes and set it aside to a warm place. Rise for 30 minutes. Divide the dough into equal parts and bake round balls. Set aside with a cloth over it, so they rise to double size. Bake in the oven at 200 degrees for 15 minutes.
