Homemade Crispbread with Boiled Eggs

Breakfast time is one of the nicest things I know and you most likely already have the ingredients for this little dish at home. All you need is eggs, oatmeal, mayo and salt and pepper. A little green garnish helps for visual sake, but can be omitted. If you want to make this dish gluten-free, you must use gluten-free oats.

Ingredients

    Crisp bread:

  • 1 x eggs
  • 50 g oats

    topping:

  • 2 x eggs
  • 1 tbsp mayo

Method

  1. To a bowl, break eggs and whisk it together. Add oats and combine. On a baking tray, place baking sheets. Spread the batter out into round flat breads. One serving gives 3 pcs.
  2. Bake the crisp breads at 220 degrees celsius for 15 minutes. If you want, you can turn them when there are a couple of minutes left in the cooking time. Cool on a plate.
  3. Boil eggs hard-boiled (10 min) or soft-boiled (7 min).
  4. Spread mayo on the crisp breads. If you prefer to use butter, use this instead. Peel the eggs and slice them before placing them on to the crisp breads. Top it off with some minced greens, salt and pepper.
