Gluten-free Calzone with Chocolate, Nuts and Banana

Ingredients

  • 1 ½ dl lukewarm water
  • ½ pack dry yeast
  • 1 tbsp sugar
  • 280 g gluten-free all-purpose flour
  • 15 g butter
  • 3 tsp olive oil
  • 1 tsp vinegar 7%
  • 1 tsp salt
  • 1 x eggs
  • 1 dl heavy cream
  • 100 g dark baking chocolate
  • 50 g walnuts
  • 1 x banana
  • 2 tbsp powdered sugar

Method

  1. Preheat the oven to 190 degrees celsius.
  2. Add water, yeast and sugar to a bowl and mix well. When the yeast "bubbles", it is ready. Add flour, butter, 2/3 olive oil, vinegar and salt and stir well.
  3. The dough may be a little sticky before rising. Adjust with more liquid or flour if needed. Grease another baking dish with 1/3 of olive oil and lay the dough into the bowl. Cover with a kitchen towel and place the dough in a warm area for an hour.
  4. Make a water bath by placing a small baking dish in boiling water. Add cream and chopped chocolate and stir until it melts. Add nuts, and set the mixture in the fridge for an hour.
  5. Place the dough in a floured baking sheet and divide the dough into 2. Roll out into a loaf, and spread half of the chocolate mixture on one half, and have banana slices on top of the chocolate. Fold over the other half and press the edges until it has the shape of a calzone. Continue with the next one.
  6. Brush with egg and bake in the oven for 15-20 minutes. Cool on a rack.
  7. Sprinkle with powdered sugar and enjoy.
