Ingredients
- 3 x banana
- 350 g plain white flour
- 3 tsp vanilla sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 3 tsp salt
- 250 g butter
- 100 g sugar
- 50 g brown sugar
- 3 x eggs
- 3 dl milk
- 200 g cream cheese
- 400 g powdered sugar
- 50 g cacao
Method
- Let the butter and cream cheese sit on the counter a few hours before baking, to reach room temperature.
- Preheat the oven to 175 degrees C and line a 22x33 cm baking pan with parchment paper.
- Mash the bananas and set aside.
- Combine all purpose flour, 2/3 vanilla sugar, baking powder, baking soda, cinnamon and 2/4 salt. Set aside.
- Add 3/5 butter, sugar and brown sugar to a mixing bowl or stand mixer, and mix until light and fluffy. Add eggs and mashed bananas and stir until well incorporated.
- Add flour mixture and milk alternately in three rounds.
- Pour cake batter into the baking pan and bake in the oven for 35-40 minutes. Allow the cake to cool.
- Prepare the chocolate cream cheese frosting. Combine 2/5 butter and cream cheese. Add powdered sugar, cocoa powder, 1/3 vanilla sugar and 1/4 salt. Mix until you got a smooth and even frosting.
- Frost the cake with chocolate cream cheese frosting and cut into even pieces. Enjoy!
