Ingredients
- 140 g lukewarm water
- 1 tbsp dry yeast
- 1 tbsp sugar
- 240 g milk
- 3 tbsp olive oil
- 1 tsp salt
- 540 g plain white flour
- 650 g cheese
- 4 x egg yolk
- 1 x eggs
- 2 tbsp sesame seeds
- 80 g butter
Method
- In a small bowl, combine the water, yeast and half the sugar and stir well. Set aside for approx. 10 minutes
- To a bowl, mix milk, oil, the rest of the sugar, salt, wheat flour and the yeast mixture. Knead for approx. 10 min. Cover the dough and let it rise.
- Divide the dough into 4 or more equal-sized pieces. Cover them with a kitchen towel and let them rest for approx. 20 min.
- Preheat the oven to 200 degrees celsius top and bottom heat. Combine all the cheeses if you use different types of cheese.
- Roll out the dough into an oval or circle shape. Place some cheese in two rows on the sides and roll the sides up over the cheese and form a boat shape around the dough. Then fill each khachapuri with cheese.
- Cover them with a clean kitchen towel and leave to rise for 15-20 minutes.
- Brush with egg and sprinkle with sesame seeds. Then you roast them in the middle of the oven for 15 minutes.
- Take them out of the oven and make a small well in the center of each khachapuri and put an egg yolk in. Return to the oven and cook for another 3-4 minutes.
- Divide the butter into 4 equal parts. Remove from the oven and spread a little butter around the khachapuri and add the rest until it melts. Sprinkle on chopped chives if you like.
- Tear off the edge of the bread to mix in the butter and dip into the egg and cheese filling. ENJOY!
