Baked Potato with Crispy Bits of Sausage and Homemade Herb Butter

This dish is always received with stormy cheers at our house and it is perhaps not so strange? You don't have to make homemade herb butter or crispy bits of sausage as a garnish - you can have a look in your fridge for other snacks you can top this with. Grated cheese, leftovers from another dinner, corn, leftovers from sauce... Maybe you have something in the freezer that you can heat up and use as topping?

Ingredients

  • 2 x large potato
  • 2 tbsp butter
  • 1 tsp red pepper powder
  • 2 x sausage
  • 1 handful grated cheese
  • 1 dl corn

Method

  1. Wrap the large potato to aluminum foil. Usually we eat one potato per person, but sometimes two if they are a bit small.
  2. Place the potato in the oven at 200 degrees celsius and bake for about 60 minutes or a little more depending on the size of the potato. It should be soft inside when done.
  3. In a small bowl, whisk together the butter, paprika powder and other spices you like. I've become completely crazy about spices with seaweed - which gives a fantastic taste without additives.
  4. Prepare the garnish ready when the potato is almost done. Chop the sausages into pieces and fry in a frying pan with butter until they become slightly crispy at the edges.
  5. Slice a cross in the potato halfway down. Press in towards the middle so the top of the potato opens. Top with grated cheese, corn, crispy sausages and homemade spice butter. Enjoy!
