
Ingredients
- 280 g jackfruit
- 1 pack taco spice mix
- 1 tsp turmeric
- 3 x tortillas
- 1 x red onion
- 1 x red pepper
- 1 x cucumber
- 1 x avocado
- 1 handful fresh coriander
- 1 x lime
- 1 pinch garlic powder
- 1 pinch salt
- 1 pinch black pepper
- 1 pack vegan sour cream
- 1 x taco salsa
- 2 tbsp vegetable oil
- 1 x lime
Method
- Wrap the tortillas in foil and let it heat in the oven on low heat for approx. 10-15 min.
- Put the jackfruit in a kitchen towel and squeeze out all the water until you are left with only the meat.
- Transfer the jackfruit to a pan and use a wooden spoon to divide the jackfruit into smaller pieces. Fry over medium heat with some cooking oil until the meat gets a little color, approx. 3-4 min.
- Sprinkle with turmeric powder and mix well before adding the taco seasoning with a little water. Cook until the water evaporates.
- Rinse and cut up all the vegetables and place in bowls ready to serve. Finally, make guacamole by mashing the avocado in a small bowl before adding the seasoning. Season with salt and lime juice.
- Top the tortillas with vegan sour cream and tortilla sauce.
