If you crave for a raw vegan cake that does not require a lot of ingredients, search no more! Here is one creamy and tasty mini cake :)
Ingredients
- 50 g walnuts
- 50 g almond
- 70 g shredded coconut
- 5 x medjool dates
- 1 tsp vanilla extract
- 2 tbsp cashew butter
- 100 g coconut cream
- 100 ml coconut oil
- 50 ml oat milk
- 50 ml maple syrup
- 1 pinch salt
Method
- Mix the first 5 ingredients in a food processor into a sticky mixture. Spread this mixture into a 10cm diameter springform with baking paper on its bottom. This step ensures you can extract it easier.
- Mix the rest of the ingredients in a high speed blender and pour on top of the base. Add it in the freezer for 2h until it hardens a little. Keep it in the fridge the entire time. It can be topped with pecan nuts and raw vegan chocolate. Enjoy!
