Ingredients
- 1 kg watermelon peel
- 500 g water
- 1 kg sugar
- 10 x cardamom seed
- 3 tsp lemon juice
Method
- Wash the watermelon thoroughly. Dry it and slice. Then cut off the peels and leave some of the red part on. Remove the green hard shell. Cut the white part into cubes
- Put the watermelon peel in a saucepan and pour over the water. Let it cook under a lid for 10 minutes on medium heat.
- Then add sugar and cardamom, and stir in the mixture until the sugar is dissolved. Let it cook for 1 ½ hours on medium heat.
- 5 minutes before removing it from the plate, stir in the lemon juice. You can test it if it is done by adding a little of the marmelade to a glass of cold water. If it does not mix with the water but rather narrows at the bottom of the glass, then the jam is ready.
- Pour into a glass and cool before enjoying. The marmelade taste better the next day.
- Save the watermelon peel the next time you eat watermelon to make this wonderful jam. Slightly less food waste and an exciting side dish to bread and yoghurt.
