Swiss Roll

A quick cake – anyone can make. It takes about 30 minutes to make this cake, so if you have unexpected guests, you can quickly "whip it up". Swiss roll can, of course, be made with different fillings, but this one is a classic summer cream cake with strawberries and bananas. One serving makes one cake.

Ingredients

  • 3 x eggs
  • 1 ½ dl sugar
  • 2 dl plain white flour
  • 1 tsp baking powder
  • 2 tbsp water
  • 3 dl heavy cream
  • 250 g strawberries
  • 1 x banana

Method

  1. Preheat the oven to 250 degrees Celsius.
  2. Whisk eggs and sugar until light and fluffy.
  3. Mix flour and baking powder, and sift the flour over the egg mixture. Gently fold together from the edge of the bowl towards the center, using a spatula. Try to retain as many air bubbles as possible.
  4. Add water and mix it into the batter.
  5. Line a baking sheet with parchment paper and spread the batter over it in a rectangle shape. Bake for 5 minutes in the middle of the oven.
  6. Sprinkle sugar over the surface. Use a sieve to evenly distribute the sugar. Place another parchment paper over the cake and then place another baking sheet on top. Let it rest for 5 minutes. (This helps retain the moisture from the cake, making it easier to roll.)
  7. Add a little sugar to the cream and whip it until stiff peaks form. You can use a stand mixer or a hand mixer. Be careful not to overwhip, as the cream might separate.
  8. Set aside a few strawberries for topping and for slicing inside the cake. Mash the rest of the strawberries into jam with a little sugar. Slice the banana and a couple of strawberries.
  9. Set aside some whipped cream for topping. Leave it in the bowl so you can easily whip it before assembling the cake.
  10. Mix the whipped cream with the strawberry jam. Now you're ready to assemble the cake.
  11. Flip the cake over between the two baking sheets so it lies bottom-side up. Carefully peel off the parchment paper and spread on the strawberry cream, banana, and sliced strawberries.
  12. Roll the cake tightly with the help of the parchment paper. Cut off each end for a taste test;).
  13. You can serve it as is or decorate the top as shown in the picture. Add whipped cream in a piping bag with a tip. I used Cacas SC12. Pipe small flowers with the cream and place strawberries and edible flowers on top. This impresses guests every single time.
