Sweet Potato Taco – The perfect opportunity to use some leftovers from your fridge! Chopped tomato, lettuce, corn, grated cheese, paprika - yes, anything you like. Tortillas are usually a little cheaper than taco shells at the store, so I've learned how to make my own tortilla lefse shells! And now you will learn it too! ;)
Ingredients
- 2 x tortillas
- 1 tsp olive oil
- 1 pinch sea salt
- 50 g sweet potato
- 1 tbsp taco spice mix
- 1 handful fresh baby spinach
- ½ x red pepper
- ½ x yellow onion
- 1 x avocado
- 1 handful grated cheese
- 2 tbsp sour cream
- ½ x lemon
Method
- Make taco shells from lefser in this way. Grease the lefs with olive oil and salt them on one side. Heat the oven to 200 degrees. Hang the lefs on a wire rack so that it forms a shell that hangs upside down. Bake for about 7 minutes or until you see that it is golden around the edges. They harden when they cool down, so place them in such a way that there is room for the filling.
- Cut the sweet potato into small cubes and fry them with taco seasoning and a little water in a frying pan until they are tender.
- Fill the shells with baby spinach, chopped paprika, onion, sweet potato, sour cream, mashed avocado, grated cheese, sour cream and squeezed lemon juice.
