Ingredients
- 75 g bacon
- 1 clove garlic
- ¼ x red onion
- 4 x potatoes
- 50 g cream cheese
- 1 dl crème fraîche
- 2 tbsp chives
- ¼ x cucumber
- 1 handful spinach
Method
- Bake the bacon in the middle of the oven at 200 degrees for 15 minutes.
- Mince the garlic and red onion, and cut the potatoes into thin slices.
- Fry the garlic and the red onion in a saucepan together with butter or olive oil until the onion turn soft. Then add the cream cheese, creme fraiche and potato slices. Cook for about 10-15 minutes until the mixture has thickened.
- Mince the chives and cut up fried bacon into pieces. Mix in with the potato mixture.
- Season with salt and pepper, and transfer the mixture to a bake tin. Bake in the middle of the oven at 200 degrees for about 20 minutes.
- Make a simple salad by cutting cucumber and a little extra red onion, and mix together with spinach.
- Serve the gratin with the salad.
