Gratin with cream cheese, potato and bacon

Ingredients

  • 75 g bacon
  • 1 clove garlic
  • ¼ x red onion
  • 4 x potatoes
  • 50 g cream cheese
  • 1 dl crème fraîche
  • 2 tbsp chives
  • ¼ x cucumber
  • 1 handful spinach

Method

  1. Bake the bacon in the middle of the oven at 200 degrees for 15 minutes.
  2. Mince the garlic and red onion, and cut the potatoes into thin slices.
  3. Fry the garlic and the red onion in a saucepan together with butter or olive oil until the onion turn soft. Then add the cream cheese, creme fraiche and potato slices. Cook for about 10-15 minutes until the mixture has thickened.
  4. Mince the chives and cut up fried bacon into pieces. Mix in with the potato mixture.
  5. Season with salt and pepper, and transfer the mixture to a bake tin. Bake in the middle of the oven at 200 degrees for about 20 minutes.
  6. Make a simple salad by cutting cucumber and a little extra red onion, and mix together with spinach.
  7. Serve the gratin with the salad.
