Christmas Spice Herring

Herring belongs to Christmas, and homemade tastes best! This recipe is a classic in Norwegian homes.

Ingredients

  • 4 dl water
  • 3 dl sugar
  • 2 dl vinegar 7%
  • 4 x herring fillet
  • 1 x yellow onion
  • 1 x clementine
  • 1 x bay leaf
  • 10 x whole cloves
  • 10 x whole pepper
  • ½ tsp aniseed
  • 6 x whole clove pepper

Method

  1. Make vinegar in this way: Add water, sugar and vinegar 7% until the sugar has dissolved.
  2. Sterilize glasses in this way: Wash the glasses completely clean, rinse them well and put the glasses in the oven for 10 minutes at 100 °C. The glasses must be completely dry. Fill the jars completely with brine and put the lid on.
  3. Cut the herring into pieces. Layer herring, sliced onion and spices to sterilized glass. Add the clementine juice.
  4. Pour the brine over the fish.
  5. Let it cool for at least a day before using.
