Toast with scrambled egg and diced tomato

The favorite breakfast of all time! This was the result of a tired tomato left in the fridge. A little magic and it survived from being tossed in the bin.

Ingredients

  • 1 x slice of bread
  • 2 x eggs
  • ½ x tomato
  • ½ handful fresh coriander
  • 1 pinch black pepper
  • 1 pinch sea salt flakes
  • 1 tsp mayo

Method

  1. Toast a slice of bread in the toaster. If you don't have a toaster, you can fry it on both sides to a frying pan with a little olive oil, or heat it in the oven at 200 degrees for 5-6 minutes. If you have fresh bread, you don't need to do anything ;)
  2. Heat a frying pan and melt the desired amount of butter. Crack eggs into the pan. If you get any shell, you can fish it up with a piece of the larger eggshell. When the egg has fried a little, stir it around with a wooden spoon or two chopsticks until the eggs are nicely scrambled. Takes about 2–3 minutes. It should be slightly moist. Do not fry it completely dry.
  3. Dice tomato and chop the coriander.
  4. Spread scrambled eggs and tomato to the toast, and top with mayo, freshly ground pepper, flake salt and coriander.
