The favorite breakfast of all time! This was the result of a tired tomato left in the fridge. A little magic and it survived from being tossed in the bin.
Ingredients
- 1 x slice of bread
- 2 x eggs
- ½ x tomato
- ½ handful fresh coriander
- 1 pinch black pepper
- 1 pinch sea salt flakes
- 1 tsp mayo
Method
- Toast a slice of bread in the toaster. If you don't have a toaster, you can fry it on both sides to a frying pan with a little olive oil, or heat it in the oven at 200 degrees for 5-6 minutes. If you have fresh bread, you don't need to do anything ;)
- Heat a frying pan and melt the desired amount of butter. Crack eggs into the pan. If you get any shell, you can fish it up with a piece of the larger eggshell. When the egg has fried a little, stir it around with a wooden spoon or two chopsticks until the eggs are nicely scrambled. Takes about 2–3 minutes. It should be slightly moist. Do not fry it completely dry.
- Dice tomato and chop the coriander.
- Spread scrambled eggs and tomato to the toast, and top with mayo, freshly ground pepper, flake salt and coriander.
