
Ingredients
- 200 g kidney beans
- ½ pack taco spice mix
- ⅓ x tomato
- ½ x red onion
- ⅓ pack fresh coriander
- 4 x tortillas
- 50 g spinach
- 100 g corn
- 50 g cheese
- 50 g tortilla chips
- 1 dl sour cream
- ½ x lime
Method
- For this dinner we'll be using the guacamole made earlier in the weekly menu.
- Fry the kidney beans and taco seasoning in a pan and mix well.
- Dice the tomato and red onion, and roughly the coriander.
- Place spinach, kidney beans, chopped vegetables, corn and cheese in the centre of the tortilla and fold like a burrito.
- Bake in a sandwich maker or waffle iron for about 5 minutes.
- Serve with tortilla chips, sour cream, guacamole and lime.
