Fish Cakes with Mashed Potato and Green Salad

A quick weekday dinner! This is so easy and so good.

Ingredients

  • 2 x potatoes
  • 1 tbsp butter
  • 1 dl milk
  • 1 pinch sea salt flakes
  • 1 pinch black pepper
  • 2 x fish cakes
  • 1 x celery sticks
  • ΒΌ x cucumber
  • 1 handful parsley
  • 2 tbsp sour cream
  • ΒΌ x lemon
  • β…™ x chinese cabbage

Method

  1. Dice the potato and boil it to salted water.
  2. Mash the potato together with butter, milk (you can also use sour cream if you like), flaked salt and coarsely ground pepper.
  3. Fry the fishcakes in a pan with butter until they are heated through.
  4. Cut Chinese cabbage, celery stick, cucumber and parsley, and mix it together with sour cream and squeezed lemon in a bowl. Season with salt and pepper.
  5. Serve immediately.
