Lime, garlic, a splash of white wine and Parmesan is a very good companion to pasta, and we keep coming back to this little dish. You can replace lime with lemon if you have it at home.
Ingredients
- 100 g dried pasta
- 1 x lime
- 1 clove garlic
- 1 x shallots
- 1 x celery sticks
- 1 dl dry white wine
- 1 tbsp butter
- 50 g parmesan
- 1 handful parsley
- 1 pinch sea salt flakes
- 1 pinch black pepper
Method
- To a pot, add plenty of water. Boil and add the pasta and half the lime juice. Boil until the pasta is al dente.
- Mince the garlic, shallot and celery stick.
- Save some of the pasta water (about 1 dl per serving).
- Fry garlic, shallots and celeriac in a frying pan with olive oil. About 2-3 minutes.
- Mix together the pasta, fried garlic, shallots, celery stick, the rest of the lime juice and dry wine in the pot and bring to the boil. Add pasta water and let it simmer a little. Add grated parmesan and chopped parsley. Season with salt and pepper and serve immediately.
