Ingredients
- 1 clove garlic
- ½ x yellow onion
- ½ x broccoli
- 5 dl water
- 1 x beef bouillon
- 125 g diced bacon
- ½ dl cream
Method
- Dice the garlic, onion and broccoli.
- Fry the onion and garlic in a saucepan with a little oil or butter until the onion is soft. Add the broccoli bouquets and cook for a few more minutes.
- Pour in water and bouillon, and let the soup cook for about 15 minutes - until the broccoli is tender.
- In the meantime, you can fry the diced bacon in a frying pan.
- Add cream to the soup and blend with an immersion blender until smooth. Season with a little salt and pepper if needed.
- Serve broccoli soup with bacon, and preferably some slices of bread.
- Note! If you follow the weekly menu, set aside 1 dl of the broccoli soup per person. It'll be used in the next dinner.
