Pasta with chicken and creamy curry sauce. A perfect combination of Italian and Asian. Pasta express is originally a pasta dish I was served at a restaurant near where I live, but this version is only vaguely inspired by that one. I have since created my very own twist. Of course for the better I think (immodestly). So now it's up to you to try out this recipe and see if you like it as much as I do! This recipe uses neutral oil for frying.
Ingredients
- 600 g chicken breast
- 3 dl cream
- 4 tsp red curry paste
- 3 tbsp chicken broth
- 1 tbsp soy sauce
- 2 clove garlic
- 400 g pasta penne
- 1 x yellow onion
- 1 x red pepper
- 1 x broccoli
Method
- Start by sauteing finely chopped garlic in a splash of neutral oil. If you make several portions, you must add more oil. Add curry paste (you have to taste this because the strength of the curry paste varies greatly) then add soy sauce.
- Add cream and season with chicken broth, you can also use strongly mixed chicken stock. Let this simmer until the cream thickens.
- Cook the penne al dente (cooked so as to be still firm when bitten), drain the water and set aside.
- Cut the chicken fillet into thin strips or small cubes. Fry the chicken and onion in the pan until the chicken is cooked through. Set aside!
- Add chopped peppers and broccoli in the cream and let it cook until the broccoli is tender.
- Mix in the penne and chicken and turn well so that everything is covered in the good cream sauce! Season to taste with salt, pepper, chilli flakes, if you like it strong, and possibly more curry paste!
