Squashgetti Carbonara

You need a spiralizer to make zucchini strips.

Ingredients

  • 150 g zucchini
  • 120 g diced bacon
  • 1 x egg yolk
  • ½ dl heavy cream
  • 1 dl parmesan
  • 1 tsp salt
  • 1 tsp black pepper

Method

  1. Use a spiralizer to make make squash strips / squashgetti.
  2. Fry bacon to a frying pan.
  3. To a bowl, whisk together the egg yolk, cream, parmesan, salt and pepper.
  4. Turn down the heat on the pan with the bacon, and add the squashgetti. Fry for 2 minutes.
  5. Add the egg mixture and mix quickly.
  6. Top it off with grated parmesan and a sprinkle of pepper.
