Freshly Baked Christmas Bread with Butter and Brown Cheese - just close your eyes and remember the smell and taste. This is a Christmas classic that we never get tired of. One portion makes two loaves. You can also use this dough to make buns or pretzels.
Ingredients
- 150 g butter
- 1 x eggs
- 100 g raisins
- 120 g wheat flour
- 120 g sugar
- 1 tsp salt
- 1 tsp cardamom
- 6 dl milk
- 50 g yeast
- 50 g candied peel
Method
- Bring the egg and butter to room temperature by placing them on the counter. You can dice the butter if you prefer. Soak the raisins in water. This will make them more flavorful and softer in the end result.
- Use a stand mixer.
- Mix the dry ingredients to the bowl.
- Heat the milk to 30 degrees on low heat. Make sure the milk does not get over heated.
- Crumble the yeast and combine with the milk until it dissolves.
- Add the liquid and egg to the dry ingredients and knead until it becomes a smooth dough for about 5 minutes at low speed. Let the dough rest for 10 minutes.
- Add the butter and continue kneading for 4 minutes. Drain the water from the raisins and add them to the dough along with the candied peel. Knead until they are well incorporated into the dough, a couple of minutes.
- Cover the bowl with a cloth and place it in a warm place for about 1 hour.
- Shape the dough into a loaf. You can use a round pan if you want, or make a beautiful braid. Let the dough rise for 30 minutes.
- Preheat the oven to 200 degrees and bake the bread for 25 minutes. Cover the bread with parchment paper after 15 minutes to prevent the top from burning.
- Melt some butter and brush the bread as soon as it comes out of the oven. Serve with Norwegian brown cheese, jam, and butter.
