Potato Waffles

Learn to LOVE your leftover boiled potatoes! The perfect food saver recipe. Potato waffles is perfect when you have potatoes lying around that will soon expire, or have already expired.

Ingredients

  • 500 g boiled potatoes
  • 2 dl sour cream
  • 2 x eggs
  • 125 g plain white flour
  • 1 tsp baking powder
  • 2 tbsp butter
  • 2 dl milk
  • 100 g grated cheese
  • 3 x spring onion
  • 1 tsp salt

Method

  1. Grate or mash the potatoes.
  2. To a bowl add sour cream, eggs, all-purpose flour and baking powder.
  3. Add melted butter and potato, and beat the batter with milk until you get a thick waffle batter. Add more milk if you find the batter is too thick.
  4. Mince the spring onions, only the green parts. Add spring onions and grated cheese to the waffle batter. Season to taste with salt.
  5. Cook the potato waffles until golden in a waffle iron. We used a spoon to spread thick the batter to the iron. Cool the waffles on a wire rack. Top it of with your favorite topping and enjoy!
