Ingredients
- 100 g butter
- 200 g oats
- 100 g sugar
- 1 x eggs
- 100 g dark baking chocolate
Method
- Melt butter and pour into a bowl along with half of the oatmeal. Mix together and set aside.
- Beat eggs and sugar until eggy.
- Add the oatmeal and butter into the egg mixture.
- Run the remaining oatmeal in a blender until it has turned into flour. Add the oatmeal to the bowl along with the rest of the ingredients.
- Use a tablespoon to spread the batter on a baking tray lined with parchment paper, keeping a good distance between the biscuits. Bake in the centre of the oven at 190 degrees celsius for about 6-8 minutes. Cool on a wire rack.
- Melt dark cooking chocolate over a water bath, and drizzle melted chocolate over the oatmeal cookies. Store in a box with a lid.
