Noodle Salad With Peanut Sauce

If you follow the weekly menu this dish is part of, you should use the peanut sauce you made earlier in the week. You can use any packet of noodles, but I prefer kimchi flavor for this dish. Save the stock because you will use it for "spicy soup", which is part of this week's menu.

Ingredients

  • 5 dl water
  • 1 pack kimchi noodles
  • 1 x carrot
  • ¼ x cucumber
  • 1 x cabbage leaves
  • 2 handful coriander
  • 1 handful peanuts
  • 1 x nori

Method

  1. Boil water and add kimchi noodles to the pot.

  3. Boil for 3 minutes and strain the stock into a clean glass. You should save this for the next dinner if you follow the weekly menu of which this dish is a part.
  4. Slice cucumber, cabbage leaves and coriander into small pieces.
  5. In a bowl, mix the vegetables and noodles with peanut sauce and minced peanuts. Top it all of with some crushed nori and enjoy that extra umami taste!
