Mango Maki

If you are making the weekly menu this dish is part of, then you must use the rice you made the day before. Otherwise, you can find a recipe for sushi rice here in Sulten. If you have not made rice, it will take about 60 minutes longer to make the dish.

Ingredients

  • ¼ x mango
  • ¼ x cucumber
  • ¼ x spring onion
  • ¼ tsp sriracha
  • 1 tbsp mayo
  • 2 x nori

    mango sauce:

  • ¼ x mango
  • 1 tbsp water
  • 1 tbsp mayo
  • 1 tsp sugar

Method

  1. If you have not made rice as part of the weekly menu this dish is part of, you can find the recipe for sushi rice here in Sulten.
  2. Slice mango, cucumber and spring onion.
  3. Cover the sushi mat with plastic wrap.
  4. Make chili mayo by mixing mayo and sriracha.
  5. Place the nori on the mat, and press the rice down onto the nori in a thin, covering layer. You can either use two tablespoons, or clean fingers. Dip your fingers in water and place the rice.
  6. Add mango, cucumber, spring onion and chilli mayo.
  7. Make the maki using the sushi mat. Cut into 8 equal parts, and repeat until you have used up the ingredients.
  8. Place the maki on a plate and cover with mango sauce. Serve with soy sauce, pickled ginger and wasabi.
  9. If there are any leftovers, you can keep them in the fridge for lunch the next day.
