Leftover Tomato Soup Pasta

This dish tastes heavenly and is a very good reason to never throw away tomato soup. You can use any pasta you have, in this dish I used lasagne sheets. Then just heat the soup and top with fresh sweet plum tomatoes and parmesan. Serve with fried chicken, cottage cheese or legumes for more protein. If you follow the weekly menu of which this dish is a part, you must use the leftovers of the "World's best tomato soup", which you made the day before. Ca 3 dl soup a portion.

Ingredients

  • 100 g dried pasta
  • 1 dl pasta water
  • 1 handful plum tomato
  • 1 handful fresh basil
  • 1 handful shredded parmesan

Method

  1. Cook dried pasta as directed on the package. You can use fresh pasta if you like. Set aside some pasta water.
  2. Heat the tomato soup on low heat, about 3 dl per portion, and combine with pasta water as much as you feel is needed.
  3. Mince fresh basil and divide sweet plum tomatoes. Grate parmesan.
  4. Combine pasta and leftover soup. Top it off with basil, plum tomato and grated parmesan. Enjoy!
