 Galette Bretonne with ham and cheese

Do you want a good tip for the weekend breakfast? This is called Galette Bretonne and is a traditional dish from Breton in France. They are pancakes made with buckwheat and they can be filled with many different things, but this is the most classic version with eggs, ham and cheese!

Ingredients

  • 200 g buckwheat flour
  • 4 ½ dl water
  • 1 tsp salt
  • 5 x eggs
  • 8 slices ham
  • 200 g grated cheese (for example comté or gruyere)

Method

  1. Start with the pancake batter: Mix buckwheat flour, water, salt and 1 egg, and let the batter rest on the counter for 20 minutes.
  2. Put a little butter in a frying pan and fry each pancake for 1-2 minutes, until it starts to get a little color underneath. Crack an egg in the middle of the pancake and spread the egg white slightly without cracking the yolk. Continue to fry until the egg white has set a little, and sprinkle over cheese and strips of cooked ham. Fold in the edges and continue baking until the cheese has melted and the pancake is golden brown and slightly crispy underneath.
  3. Serve the pancakes warm. You can also serve it with a small salad on the side!
