BICHAK - Uzbek pirogues stuffed with pumpkin

I grew up with these priogs, my grandmother used to fill bichak with spinach, but this time I tried mine with pumpkin, which turned out sweet and tasty. Super easy to prepare too. You're going to love it!

Ingredients

  • 500 g plain white flour
  • 2 tsp baking powder
  • 1 x eggs
  • 2 tsp salt
  • 500 g pumpkin
  • 2 x yellow onion
  • 100 g butter
  • 300 g water

Method

  1. Mix flour, salt, eggs and water to a firm dough. Add more/less water if necessary until you get a smooth dough. Let the dough rest under a towel.
  2. Meanwhile, peel and cut the pumpkin into small square pieces and the onion. Add salt and pepper. Shape the dough into two balls and roll one firmly into a rectangular shape. Cut square shapes and pour a tablespoon of the filling onto each dough shape. Turn one side over to form a square pie. Do the same with the other dough.
  3. Heat a frying pan, lower to medium heat and fry the pierogies on both sides. When the pirogues are ready, you can spread the cold butter on top & place all the pirogues on top of each other so that the butter is drawn in and becomes buttery.
  4. Serve with light yogurt and enjoy with a cup of tea with honey!
