Fresh Spaghetti with Leftover Spinach Soup and Parmesan

The quickest dinner you can make in your kitchen is a leftover dinner, and when you have soup in the fridge there are lots of delicious dishes you can make. My favorite is to do something as simple as cook fresh spaghetti and mix it with the soup. Top with parmesan and just enjoy! This dish is part of the weekly menu and you will use the soup you made earlier in the week to make this dish. Note: Reheat the soup on low heat.

Ingredients

  • 100 g fresh spaghetti
  • 1 handful parmesan
  • 20 g spinach

Method

  1. Boil the pasta al dente to a pot with salted water.
  2. Heat the soup to a saucepan on low heat. Add spaghetti and combine together. Stir in Parmesan and serve topped with chopped spinach and more grated parmesan.
