Ingredients
- 1 dl rice
- 100 g edamame
- ½ x cabbage
- ½ x mango
- 2 x carrot
- ½ x red onion
Method
- For this dinner we'll be using the leftover tahini dressing made earlier in the weekly menu.
- Boil rice according to the instructions on the package.
- Boil edamame according to the instructions on the package. If using unshelled edamame, remember to separate the soybeans from the skin once cooked.
- Peel the leaves off the cabbage and cook them for about 1-2 minutes. Place on a dry kitchen towel.
- Slice mangoes, carrots and red onions into strips.
- Fill the cabbage leaves with mango, red onion, carrot and edamame and roll them up. Dip in homemade tahini dressing and serve with rice.
